Making Flour from Mesquite Beans

Mesquite BeansI’d heard you could make flour from mesquite beans, so when I found a class at the Boyce Thompson Arboretum, I happily took it!

Turns out, mesquite flour is quite good…and good for you!  It’s gluten-free for those who have digestive issues.  And it’s naturally sweet for those with blood sugar issues.  See for yourself…just pick up a pod and start chewing on it!

Anyway, the beans themselves are indigestible, so the process involves repeatedly grinding dried pods and sifting the result to remove stray bean matter.  Or if that’s too “crunchy” for you, try this organic raw mesquite powder and start experimenting!
